3-Tool Cultured Butter: Real Fermented Butter Without a Stand Mixer

Cultured butter has a more pronounced flavour than the regular kind — a light, whipped texture and a genuine tang, made with a live culture rather than just cream and salt. And you don't need a stand mixer, a fine mesh strainer, or any special gear to make it. Just a large glass jug, a wire whisk, and a wooden spoon.
What you'll need
Ingredients:
- 1 qt. (4 cups) heavy cream, preferably organic
- 2 Lactobacillus plantarum probiotic capsules, or 2 tbsp. live natural Greek yogurt as a starter
- ½ tsp. salt, preferably unrefined or Kosher
- Ice-cold water, for washing
Equipment:
- Large glass measuring jug
- Wire whisk (a hand-held pastry blender works too)
- Wooden spoon
- Bowl of ice water, for washing
- Air-tight container for storage
Pre-preparation and inoculation
Wash the jug, whisk and spoon with hot, soapy water, rinse well, and air dry. Pour the heavy cream into the jug and bring it to room temperature, around 72°F (22°C). Stir in the probiotic capsule contents, or the live Greek yogurt if that's your starter of choice, and whisk gently but thoroughly so the culture is distributed evenly through the cream.
Fermenting the cream
Cover the jug with a clean kitchen towel — enough to keep dust out while still letting it breathe — and set it somewhere warm, ideally 70–75°F (21–24°C). Leave it to ferment for 18–24 hours.
Fermentation time depends on your ambient temperature and how tangy you want the result — warmer speeds it up.
After that window you'll have thick, cultured cream with a few bubbles, a slightly curdled look, and a tangy aroma. Refrigerate it for at least 4 hours, or overnight, which helps the fat separate more cleanly once you start whisking.
Whisking it into butter
Let the cultured cream warm slightly to about 60°F (15°C) before you start — that's the ideal temperature for whisking. Then whisk vigorously by hand, in a steady rhythm. The cream will move through whipped cream, then stiff peaks, then a grainy, broken stage. Keep going until the butter solids clearly separate from the buttermilk. By hand this takes longer than a stand mixer — usually 10– 20 minutes — so pace yourself. Use the wooden spoon to press the solids to one side of the jug as they collect.
Straining, washing, and salting
Tip the buttermilk out of the jug, holding the butter back with the wooden spoon, and set the buttermilk aside — it's genuinely good in pancakes or quick bread, don't waste it. Return the butter to the jug and pour ice-cold water over it.
Icy water keeps the butter firm and stops it dissolving into the rinse water.
Press and knead the butter against the side of the jug with the wooden spoon, pouring off the cloudy water and repeating with fresh ice water until it runs clear. Then, in a clean, dry jug, stir in the salt until the butter turns pale and creamy, and transfer to a butter bell or air-tight container.
