Classic Greek Yogurt: Thick, Tangy, and Genuinely Probiotic

Greek yogurt is just yogurt that's been strained — the straining is what pulls out the whey and leaves you with that thick, spoon-standing texture and the extra protein Greek yogurt is known for. This version is cultured with Lactobacillus acidophilus, a well-studied probiotic strain, and can be strained to whatever thickness you actually want, from a soft regular yogurt through to labneh.
The basic process
Milk is heated to around 180°F (82°C) and held there briefly — this denatures the milk proteins, which is what allows the finished yogurt to set thick rather than runny. It's then cooled to around 110–115°F (43–47°C), inoculated with the L. acidophilus culture, and left to ferment at a steady temperature for 6–12 hours. The longer it ferments, the tangier and thicker it gets — it's ready once it pulls cleanly away from the side of the container when tilted.
Straining is where the magic happens
After chilling, the set yogurt gets strained through cheesecloth. Strain for around 2 hours for a regular Greek yogurt texture, 3–4 hours for something extra-thick, or 4+ hours if you want to end up with labneh — a spreadable, cream-cheese-like yogurt cheese. The straining time is really the only variable that separates "yogurt," "Greek yogurt," and "labneh" from each other; it's the same base ferment throughout.
If your yogurt isn't thickening, the two usual culprits are an incubation temperature that's drifted too low, or cream that's ultra-pasteurised or contains stabilising gums — both interfere with how the culture sets the proteins.
Why it's good for your gut
L. acidophilus digests the lactose in milk, producing lactic acid that lowers the pH — that's the mechanism behind both the thickening and the tang. It's one of the most widely studied probiotic strains, with research behind its role in easing lactose intolerance symptoms and supporting gut flora balance, and it happens to be well-suited to dairy fermentation specifically, which is part of why it's such a common yogurt culture.
