Kombucha, The Gut-Smart Way

Kombucha is a fermented tea, built on a SCOBY — a symbiotic culture of bacteria and yeast — that turns sweet tea into a tangy, fizzy, genuinely probiotic drink. Unlike most of the ferments in this series, kombucha is yeast-dominant rather than bacteria-dominant, which is exactly what gives it that distinct flavour and effervescence. I brew this every week, and it's one of the easiest ferments to build into a regular kitchen routine once you understand the rhythm.
The basic process
A SCOBY is added to sweetened black or green tea, then left to ferment at room temperature for roughly 7–14 days, depending on temperature and how tart you want the result. During that window, the yeast consumes the sugar and produces alcohol and CO2, while the bacteria convert that alcohol into organic acids — primarily acetic acid, which is what gives kombucha its characteristic tang. The longer it ferments, the less sweet and more acidic it becomes.
Getting the balance right
Taste-testing daily from about day 5 onward is the easiest way to know when it's ready — there's no substitute for tasting your own brew, since ambient temperature changes the timeline more than any fixed schedule can predict. Once it's at the tartness you like, you can bottle it as-is, or move to a second ferment: bottling with fruit, ginger, or herbs added for flavour and extra natural carbonation, then leaving it sealed at room temperature for another 2–3 days before refrigerating.
A healthy SCOBY should smell pleasantly vinegary and slightly yeasty — never sharply like nail polish remover or acetone, and never showing fuzzy mould. If either of those show up, it's time to start again with a fresh culture.
Keeping your SCOBY alive
Between batches, a SCOBY lives happily in a small amount of finished kombucha (its "hotel"), at room temperature, out of direct sunlight. It doesn't need daily attention — much like Kevin the sourdough starter, it's a slow, self-sustaining culture that rewards a consistent rhythm rather than constant fussing.
Why it's good for your gut
The fermentation process produces live yeast and bacteria, organic acids, and B vitamins, along with small amounts of beneficial compounds generated as by-products of the fermentation itself. As with any live ferment, the specific bacterial and yeast strains present in a home-brewed SCOBY vary batch to batch, which is part of what makes kombucha interesting biologically — and part of why commercially standardised claims about "the" kombucha microbiome don't tell the whole story.
